These corn cans has been sitting on our kitchen cabinet for weeks. Waiting for the perfect moment, the perfect dish where it can be used. These corns are Mega Prime’s newest product (I guess) and I was sent 2-3 cans of each variant. Corn Muffin Recipe Using Cream Style Corn
Finally, the right dish came along for the whole kernel corn. Chili con Carne nonetheless. Our all time favorite! We can eat this dish everyday.. only, I am always tamad to cook because chili con carne mixture is hard to find. Then I discovered the magic spice called Badia’s Complete Seasoning®. It smells like chili con carne or even tacos but not too much. I bought it at Landers Superstore Balintawak. You should visit that store!
In all its “untouched” glory. Usually, I serve it in individual bowls, rice topped with the ulam and cheese then microwave. Kaso sira ang microwave ko (still looking which brand to buy) so I can’t do the usuals. So we baked it and turned out as good. Yun lang, sayang ang gas! Ang tagal sa oven eh.
It so happens that I accidentally open a cream style corn while preparing our chili corn carne. Eh since sayang ang pre heating, might as well use the extra heat to bake corn muffin! So, Corn Muffin Recipe Using Cream Style Corn ang star ng post na ito and not chili con carne.
Corn Muffin Recipe Using Cream Style Corn
The recipe is super easy and you don’t need corn meal for this one, using Mega Prime’s cream style corn did the trick.
Corn Muffin Recipe Using Cream Style Corn:
Ingredients:
- 1 can Mega Prime Cream Style Corn
- 1/2 cup powdered milk (I use Anchor powdered milk)
- 1/4 cup melted salted butter (I use Queensland salted butter)
- 2 eggs
- 1/2 cup brown sugar
- 1 1/2 cup flour
- 1 tbsp baking soda
How to bake:
- Preheat oven to 205 C
- Combine butter + corn + egg
- Add sugar + flour + baking soda
- Line muffin pan with liner
- Spoon the mixture to almost full.
- Bake for 25 minutes (or until top is golden brown and cracked)
This mixture is for 1 dozen corn muffin.
